I ♥ Caramel Filled Chocolates

Oh. My. Goodness.
That’s just about all I can say.

I dream about the silky, creamy goodness inside a dark, bittersweet chocolate shell.

Not long ago I had some extra caramel in the refrigerator from an earlier project (doesn’t everybody?). The next time I rolled truffles in dark chocolate, I planned ahead and melted additional dark chocolate, which was used to fill my heart chocolate molds. A quick dollop of caramel in each heart, followed by a few grains of fleur-de-sol to bring out the flavor, and a schmear of chocolate to seal the backs of the hearts, and we were in business!

The end result was a study in contrasts – a marriage of a crisp bittersweet shell filled with creamy, caramelized goodness. Doesn’t that make you dream in chocolate too?

Tropical Cupcakes for a Beach Wedding

Happy Sweet 16

A girl celebrates her Sweet 16th birthday only once – and wants it to be memorable. With that  plan, Deana and Hannah approached Beaches Pastry to make a spectacular birthday cake incorporating many of Hannah’s favorite things:

different shades of purple
crystals and bling
carrot cake and chocolate cake
rolled fondant and bows

We sketched ideas at our first meeting, which resulted in a cake design that Hannah loved.

 

Sweet 16 Birthday Cake

Taking cues from her favorite flavors, we created a 3 layer cake: the bottom layer was carrot cake, made with pineapple, walnuts, coconut and raisins and filled with orange scented cream cheese frosting. The middle and top cakes were chocolate cake with layers of Nutella hazelnut spread and white chocolate buttercream.

 Chocolates and wine – this is always a grand pairing! And, this weekend you can sample over 145 different wines and champagnes at the Ponte Vedra Chamber of Commerce’s 8th Annual Wine and Food Fest. Don’t miss Saturday afternoon’s Grand Tasting event, featuring signature dishes from local restaurants, the University of North Florida’s Jazz Trio, and a Silent Auction.

Think Pink – Breast Cancer Awareness

As Fall approaches, our thoughts turn to football season, back to school time and Halloween. Just as important, it’s time for Breast Cancer Awareness. The month of October is dedicated to thinking pink and increasing our awareness.

Aside from non-melanoma skin cancer, breast cancer is the most common form of cancer in women. Breast cancer is the number one cause of cancer death in Hispanic women. It is the second most common cause of cancer death in white, black, Asian/Pacific Islander, and American Indian/Alaska Native women. (CDC website)

A stylish wedding cake

The cake for Amanda and Matt’s recent wedding reflects Amanda’s stylish taste with small, simple patterns and the use of tone-on-tone coloring on the cake’s exterior. White roses and light green orchid blossoms add a hint of color and grace to this lovely cake.

Each cake was different, allowing guests to sample more than one flavor. Dark chocolate cake was filled with white chocolate mousse, rich vanilla cake was filled with raspberry mousse, and vanilla cake was filled with dark chocolate mousse.

Amanda’s mother sent me an e-mail recently:

“Mary – the wedding cake was beautiful and tasted wonderful. … Thanks again for being a part of Amanda’s wedding and for making her day special.”

Who knew all of those delicious flavors were hidden under layers of Italian Meringue Buttercream?!
